Avocado Brownie Cookies
Makes 42 cookies
2 Cups Hazelnut Flour
½ Cup Organic Unsweetened Cocoa Powder
2 tsp Baking Powder
¾ Cup Coconut Sugar
½ tsp Pink Himalayan Salt
1 Large Organic Avocado
¼ Cup Organic Coconut Milk
¼ Cup Grass Fed Unsalted Butter or Coconut Oil
4 oz. Organic Unsweetened Chocolate
3 Large Eggs
½ tsp Vanilla Extract
Directions:
Preheat oven to 350℉
Mix all dry ingredients together in a bowl.
Melt chocolate and butter/oil over a double broiler.
Make smooth the avocado in a medium bowl, small lumps are ok, or if you want you can mix in a blender until smooth. Add coconut milk. Mix until combined.
Add eggs and vanilla to avocado mixture. Mix until combined.
Combine chocolate mixture to avocado mixture. Mix until combined.
Stir in dry ingredients into wet ingredients until fully combined.
Scoop batter onto a sheet tray lined with parchment. Bake for 8-10 minutes.
