Eggs over Easy with Breakfast Sausage and Sautéed Garlic Kale

Makes 1 serving

  • 1-2 Eggs

  • 1/2 cup Cooked Breakfast Sausage

  • 1 Bunch of Kale cleaned, de-stemmed, rough chop

  • 5 Cloves of Garlic

  • 1 tsp Apple Cider Vinegar/ Red Wine Vinegar

  • 1 tsp Ground Mustard

  • 1/4 cup Water

  • Salt and Pepper to taste

Directions:

  1. Heat a medium size sauce pan on medium low.

  2. While the pan is heating roughly chop the garlic.

  3. Add a drizzle of avocado oil to the pan, add garlic and stir it around not allowing it to brown.

  4. Add kale, ground mustard, and salt and pepper, toss until combined. Add water and cover with a lid for 5 minutes. When done take off lid, if left over water allow it to cook off, add vinegar. Stir and place on plate or bowl.

  5. While kale is cooking heat up prepped sausage and cook your eggs to your liking.

  6. Place sausage and eggs over kale and enjoy!
