Braised Short Ribs with Daikon Root And Carrots
Makes 4 servings
2 pounds Bone-In Grass Fed Short Ribs
2 Large Daikon Roots 1.5-2” sliced
3 Large Carrots 1/2” sliced
1/2 Large White Onion sliced thin
5 Garlic Cloves roughly chopped
2 Cups Bone Broth
Directions:
Preheat oven to 350F
Heat your dutch oven to medium high heat. Once hot coat the bottom in avocado oil.
Salt and pepper the short ribs and sear all sides. Place on plate and set aside.
Add onions and garlic and sauté for 3-5 minutes stirring frequently, do not brown.
Add back the short ribs, daikon root, carrots, and broth.
Cover with lid or tinfoil and braise in oven for 2-3 hours or until is becomes fork tender and falls off the bone.
